Smoked mackerel and avocado salad

Another delicious ways to eat the good fats you and your brain need:

Ingredients

  • 1/2 cucumber
  • 1 avocado
  • spinach, watercress and rocket leaves
  • 4 smoked mackerel fillets
  • olive oil and lemon juice
  • pumpkin seeds
  • sliced mango (optional)

Method

Slice a cucumber and an avocado onto a salad of spinach, watercress and rocket. Lightly grill the smoked mackerel fillets and place on top. Make a dressing with olive oil, a little mustard and lemon juice and drizzle over everything. Top with some pumpkin seeds. If you haven’t already indulged in some fruit today, a slice of mango adds a sublime element to this dish.

You can also use smoked chicken or fresh prawns instead of the mackerel.
