Yesterday, I invited a few people for supper to celebrate a friend’s recovery from a rather horrible health scare. I had been planning to cook a fish tagine but, typical me, ended up at the last minute changing my mind. It was such a beautiful day that I decided I wasn’t in the mood for the deep, earthy flavours of Morocco and wanted something lighter and more zingy to match the mood of impending Spring. Too late to find a recipe, I ended up rooting in the fridge and putting this together and it turned out to be seriously delicious. Continue reading

Scallops and bacon with samphire and peas
I’ve recently subscribed to Fishbox in an attempt to get more fresh fish into my diet which is both responsibly caught and carefully selected. My first couple of boxes have been a great adventure and I’m looking forward to eating a wider variety of fish more regularly. Continue reading
Power salad of chicken livers and sherry with orange and fresh mint
I’ve cooked this warm salad several times now and it gets rave reviews, it makes a great starter or a light lunch. Even if you think you don’t like liver, chicken livers are mild tasting and full of good fats for brain and liver function. Continue reading
Slow roast lamb with fennel and herbs
Entertaining in the week is something most of us try to avoid, but sometimes it just can’t be helped. Cue my latest favourite recipe that cooks all on its own and needs nothing but some steamed greens to make it presentable. It’s easy but it tastes like heaven! Continue reading
Vietnamese pork balls
This recipe came from a wonderful day I shared with friends at Jamie’s Cookery School in Brighton. I thoroughly recommend their courses – full of useful cooking confidence and great fun to boot. Continue reading
Chunky Chicken ‘Salad’
Rooting around in the fridge the other day I found a lone chicken breast, a couple of tomatoes, a red pepper and a neglected bag of rocket which needed using up. Somehow I needed to rustle up some supper from this or do an emergency dash to Waitrose. Continue reading
Cauliflower kedgeree
Even more delicious than the ricy version, in my opinion, this kedgeree is also quicker to cook and eat. The instructions sound a bit fussy but it can all be done in 30 minutes. Continue reading
Low carb Salade Niçoise
One of my favourite salads which works equally well for two people and ten. Most of the ingredients can be prepared in advance and the salad assembled, beautifully, at the last minute. I made it recently, on one of those beautiful summer days we had, for a very important occasion with some of our specialest friends and it hit the spot. Continue reading
Grilled mackerel with lime pickle cauliflower & courgette
We all know we need to eat more oily fish but finding interesting recipes that pair well with the strong flavours can be difficult. Mackerel pairs well with all sorts of sharp flavours – bramley apple sauce, horseradish, gooseberry compote to name a few – but it’s particularly delicious paired with spicy lime pickle in this simple recipe. Try it. Continue reading
Happy Tummy Minestrone
This soup is a feed all and cure all – fresh and colourful, like an outdoor market in a bowl! Posh enough for supper with friends, just right for a homely, hearty meal when it’s cold outside, and perfect when you come home from holiday and need to top up on your vegetable intake. I often make it on a Wednesday night to use up all my vegetables before my fresh Riverford box arrives the next day. You can really use any vegetables you’ve got hanging around. Swap the pancetta for chorizo, or leave it out altogether if you want a vegetarian version. Continue reading
