Chilli pork and peanut stir-fry

I love Donna Hay’s recipes and this is a favourite.


  • 1 teaspoon coconut oil
  • ½ cup (70g) peanuts, roughly chopped
  • 1 x 500g pork fillet, thinly sliced
  • 200g green beans, sliced
  • 1 bunch broccolini, sliced
  • 3 cups chopped pak choi
  • half a fresh chilli
  • 2 tbsp chilli sauce
  • Juice of 1 lime
  • 1 cup coriander (cilantro) leaves


Heat oil in a large non-stick frying pan or wok over high heat. Add the peanuts and cook for 1–2 minutes or until golden. Remove from pan and set aside. Add the pork and cook for 2–3 minutes or until browned. Add the beans, broccolini and pak choi and cook for 3–4 minutes or until vegetables are tender.

Add the chilli and chilli sauce and cook for 1 minute. Sprinkle with peanuts and coriander and squeeze lime over the top.

Serve with rice noodles for those eating carbs.
