Prawn cocktail was one of the delights of my childhood and still has the ability to thrill! It makes a perfect low carb lunch: some prawns, mayonnaise, paprika, little gem lettuce and lemon juice. Eat immediately or layer into a tupperware for later.
- 150g prawns
- 2 tbsp mayonnaise
- 1/2 tsp horseradish
- 1 little gem heart
- 1 stick of celery.
- lemon juice
- smoked paprika or chilli powder
- avocado, optional
I’m not keen on the pink Marie Rose sauce that often accompanies bought Prawn Cocktails but I find adding a little bit of horseradish to normal mayonnaise or some lime juice works wonders.
Chop the little gem into fine shreds and tease apart. Chop the celery into fine crescents and mix with the prawns and mayonnaise. Layer this on top of the lettuce and mix with lemon juice. Sprinkle a little smoked paprika on the top.
If you’re feeling hungry or looking for supper rather than lunch, try serving with half an avocado.
The recipe travels well. Just layer the ingredients into a tupperware, leaving off the lemon juice until you want to eat it.
