Green Eggs and Ham

Not quite as weird as it sounds, this recipe makes a tasty and quick brunch or lunch. Packed with protein and magnesium, it will keep your energy levels going all day long.

Ingredients

  • 2 eggs
  • handful of frozen peas
  • spring onion
  • baby spinach
  • ham or bacon

Method

Scramble a couple of eggs in a pan with a handful of frozen peas, add a little spring onion and some baby spinach leaves right at the end so that the spinach wilts. Serve with a slice of cold ham or bacon.
